Vicaire, Gastronomie, col. 8; Goldsmiths' 9949; this edition is not in Kress (who cites only the first of 1761 and that of 1770).
One of the best eighteenth-century manuals on country life.
This work by Pons Augustin Alletz (1703-1785) was very popular and often reprinted until the following century. It not only contains details of gardening, animal husbandry, veterinary medicine and hunting, but also a large number of practical cooking recipes. The large section devoted to vines and wine contains information on choosing wines, anecdotes about authors who have written about wine and the different types of wine (red, clairet, gris, white), Burgundy, Champagne, Muscat de Saint-Laurent-en-Provence, Spanish wines, sweet wines, etc., recipes for aromatic wines (wormwood, dill, aniseed, fennel, etc.), as well as recipes for making vinegar.
Minor rubbing, otherwise a fine copy.
